Mi Sedaap Mi Goreng Asian Noodle Salad

Ingredients:

2 packs of Mi Sedaap Mi Goreng instant noodles

1 cup shredded cabbage

1 cup shredded carrots

1/2 cup sliced red bell pepper

1/2 cup edamame, shelled

2 green onions, sliced

1/4 cup chopped fresh cilantro

1/4 cup roasted peanuts, chopped

Dressing:

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon sesame oil

1 tablespoon honey or maple syrup

1 teaspoon grated ginger

1 clove garlic, minced


Instructions:


Prep Time: 15 minutes


Cook Time: 5 minutes


Skill Level: Easy


Prepare the Noodles:


Cook the Mi Sedaap Mi Goreng noodles according to the package instructions. Drain and rinse with cold water. Set aside, keeping the seasoning packets for later use.

Make the Dressing:


In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, honey, grated ginger, and minced garlic.

Combine Salad Ingredients:


In a large bowl, combine the cooked noodles, shredded cabbage, shredded carrots, sliced red bell pepper, edamame, green onions, and fresh cilantro.

Dress and Serve:


Pour the dressing over the noodle salad and toss to combine. Garnish with chopped peanuts before serving.
